Beef Stuffed Eggplant – This vegan can cook meat every once in a while 😉
My dear friend and facialist to the stars, Narine Nikogosian is back in the kitchen with me and we made Beef Stuffed Eggplant. My husband loved this recipe, I, on the other hand, only enjoyed the smells because I am a vegan, but I’m sure it is delicious!
I still can’t believe Narine has been cooking like this since she was a little girl! Here’s the full recipe:
STUFFED EGGPLANTS INGREDIENTS: –
- 3-5 SMALL EGGPLANTS
- 1/4 CUPOLIVE OIL
- 4 TOMATOES
- TWO TBSP TOMATO PASTE
- 1 LB ORGANIC GROUND BEEF
- 1/2 YELLOW ONION
- SALT TO TASTE
- PEPPER TO TASTE
- 1/2 STICK BUTTER
- OPTIONAL BELL PEPPER FOR GARNISH
DIRECTIONS:
TURN OVEN TO 350°F
SAUTE GROUND BEEF IN A PAN
DICE HALF A YELLOW ONION AND ADD TO THE PAN
ADD HALF A STICK OF BUTTER
ADD SALT TO TASTE
SOAK 4 TOMATOES IN HOT WATER FOR 10 MINUTES
PEEL SKINS OFF TOMATOES
CUT TOMATOES INTO SMALL PIECES
ADD 2 TBSP OF TOMATO PASTE
ADD A PINCH OF SALT AND PEPPER
COAT EGGPLANTS WITH OLIVE OIL AND PLACE THEM IN THE OVEN AT 350°F FOR 15 MINUTES OR UNTIL SOFT
CUT THE EGGPLANTS DOWN THE MIDDLE (LEAVE THE TWO ENDS INTACT SO THEY CAN KEEP THEIR SHAPE)
FILL EGGPLANTS WITH BEEF AND ADD TOMATO SAUCE (OPTIONAL: USE GREEN PEPPER AS GARNISH)
PLACE THE STUFFED EGGPLANTS BACK IN THE OVEN FOR 10-15 MINUTES
