These rainbow rice paper rolls are so easy to make (the tofu is the only cooking required), plus they’e light and delicious, making them the perfect summer snack or light lunch. You can customize them to your liking.
🔹 Kelp Noodles: soak them in lemon + baking soda to soften. Then rinse under water. Add a teaspoon of blue spirulina to turn the noodles blue
🔹 Rice Paper: soak in water for only 30-45 seconds…or it will become a sticky mess and you won’t be able to fold it around the veggies
Here’s what I used:
INGREDIENTS:
– Rice Paper (5-8)
– Kelp Noodles (I added blue spirulina to turn them blue)
– 1 Avocado
– 1 Tomato
– 1 Mango
– 1/2 English Cucumber
– 1/4 Purple Cabbage
– 14 oz Extra Firm Tofu
– 1 bunch of basil and/or mint leaves
TOFU MARINADE:
– 1 tbsp soy sauce
– 1 tsp rice vinegar
– 1/2 tsp garlic powder
– 1 tsp maple syrup
PEANUT SAUCE
– 2 tbsp peanut butter
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 2 tsp maple syrup
– 1 tsp gochujang
