INGREDIENTS:
* 1 banana
* 1/2 cup shredded unsweetened coconut
* 1/4 cup pumpkin seeds
* 1/4 cup dried cranberries
* 2 tbsp hemp seeds
* 1/4 cup flaxseed meal
* 3 tbsp maple syrup
* 1 cup rolled oats
* 1/4 cup sweetener of your choice (monkfruit or date sugar works well!)
* 1 ½ tsp pure vanilla extract
* 1/4 cup nut butter
* 1 tbsp psyllium husk
* 1/2 tsp EACH baking powder, baking soda and sea salt
METHOD:
– Mash the banana and add the rest of the ingredients.
– Mix and combine well.
– Rest in fridge for 15 minutes.
– Scoop out onto parchment paper (I used an ice cream scoop to help the process) and flatten.
– Bake at 375F for 11-14 min
