Protein-Rich Chocolate Chip Cookies – Full Recipe

These are grain-free, gluten-free, dairy-free, but they also taste delicious!

INGREDIENTS:

  • 1 can chickpeas (15oz), drained and rinsed
  • 1/4 cup maple syrup
  • 3/4 cup plant milk (I used flax milk for added protein)
  • 1/3 cup peanut butter
  • 3/4 cup flour (I used cassava flour, but you can use almond flour or oat flour as well, which are also gluten-free)
  • 1 tsp baking powder
  • 1/2 cup dark vegan chocolate chips — I used @enjoylifefoods
  • 1 tbsp coconut oil
  • 1 tbsp monk fruit sugar

METHOD:

  • Preheat oven to 350°F
  • Place the first 4 ingredients in a blender/ food processor and blend until smooth.
  • Transfer to a bowl, then add the rest of the ingredients
  • Form the batter into bite-sized balls with your hands or a small ice cream scooper and place on a baking tray.
  • I flattened the balls out because the ingredients don’t spread like a cookie with “conventional” ingredients.
  • Bake for 12-15 minutes.
