These are grain-free, gluten-free, dairy-free, but they also taste delicious!
INGREDIENTS:
- 1 can chickpeas (15oz), drained and rinsed
- 1/4 cup maple syrup
- 3/4 cup plant milk (I used flax milk for added protein)
- 1/3 cup peanut butter
- 3/4 cup flour (I used cassava flour, but you can use almond flour or oat flour as well, which are also gluten-free)
- 1 tsp baking powder
- 1/2 cup dark vegan chocolate chips — I used @enjoylifefoods
- 1 tbsp coconut oil
- 1 tbsp monk fruit sugar
METHOD:
- Preheat oven to 350°F
- Place the first 4 ingredients in a blender/ food processor and blend until smooth.
- Transfer to a bowl, then add the rest of the ingredients
- Form the batter into bite-sized balls with your hands or a small ice cream scooper and place on a baking tray.
- I flattened the balls out because the ingredients don’t spread like a cookie with “conventional” ingredients.
- Bake for 12-15 minutes.
