As a girl who suffers from lots of allergies, I’ve had to say goodbye to some of my favorite protein bars because they have almonds in them. Â That means, I’ve had to get creative and come up with a few of my own creations.
Here is one of my go-to protein snacks when I just want a little nugget of nourishment.  These protein-filled snacks are shaped like truffles and are great to eat on-the-go, pre or post workout.  Enjoy and let me know how they turn out!
Ingredients:
Pitted Dates – 1 – 1/2 cup
Shredded Coconut – 6 oz (half the bag)
Organic Creamy Peanut Butter – 2 – 4 tbs
If desired: Protein and Fiber Powder – 3/4 cup
Approximate Calories per ball: 75 calories
