A Little Blue Magic

If you’re obsessed with superfoods like me, I’m sure you’re a fan of Chia Pudding. Chia seeds are packed with protein and contain all nine essential amino acids (which is not that common in plant foods). They’re also an excellent source of fiber which can help lower cholesterol and keep you satiated (which may aid in weight loss since it keeps you feeling full).

These tiny seeds can swell up to 10 times their size when soaked in water. In addition to packing in protein and healthy omega-3 fatty acids, these seeds are rich in antioxidants. In fact, they contain more antioxidants than blueberries!

I typically make a batch of Chia Pudding once a week so I have healthy breakfast options at the ready. Recently, I upped the ante and added some Blue Majik – a.k.a. Blue Spirulina – which not only turns the Chia Pudding into a beautiful blue hue, it also adds more nutrition to the mix.

Blue Majik is an extract of blue-green spirulina; a highly nutritious algae that is protective against inflammation, energizing and immune boosting.

Btw, Blue Spirulina doesn’t have a fishy taste like green spirulina, which means it’s the perfect addition to chia pudding or any other sweet treats.

Recipe:

  • 1 cup Coconut Milk (you can substitute any plant milk of your choice)
  • ¼ cup Chia Seeds
  • 1 dash of Stevia
  • 1 tsp Vanilla Extract
  • ¼ tsp Blue Spirulina Powder

 

Directions: Stir everything together and divide evenly into small containers. Leave in the fridge overnight.

Optional: Add topping of your choice! My favorites are: berries, dried coconut, hemp seeds and cinnamon.
